Blanca Delia Calderon de Arragea and her farm Los Pinos are back. This time, the delicious Pacamara beans have been processed according to the classic washed method and the result is a coffee that is crystal clear and complex at the same time. A coffee that shows the incredible potential of El Salvador and the Pacamara variety.
Blancas farm Los Pinos is named after the pines that surround the family house. Blanca Delia planted Pacamara here in her garden five years ago and the coffee completely thrives in her care. The leaves, so typical of the variety, create a dark green carpet under the huge pines, and Blanca is masterful when she selects the red berries.

When we roasted this gem, we aim for the even development of the very large beans. Because of the size of Pacamara, the beans require lots of heat at the beginning of the roast to ensure that the heat penetrates through to the core and roasting through the beans fully. Then we lower the heat significantly towards crack to highlight as much of the fruity sweetness as possible.
